Middle Eastern Brown Rice Pilaf

A pilaf bursting with flavor thanks to spices like cumin, turmeric and cinnamon with added crunch and brightness from dried fruit and toasted nuts.

Servings: 4 people

Ingredients

  • 2 tbsp oil
  • ½ onion chopped fine
  • 1 cup Planet Rice Sprouted Brown Rice
  • 1 clove garlic minced
  • ½ tsp ground cumin
  • ½ tsp turmeric
  • ½ tsp cinnamon
  • 1⅛ cup water or stock
  • ¾ tsp kosher salt
  • cup dried fruit such as apricots, dates, figs or raisins (chopped if large)
  • cup toasted nuts such as almonds or pine nuts
  • 2 tbsp freshly chopped cilantro

Instructions

  • Heat the oil in a medium saucepan over medium heat.  Add the onion and cook until softened, about 3 minutes. Add the rice and cook until golden, stirring often, about 3 minutes more.  Stir in the garlic, cumin, turmeric and cinnamon and cook 30 seconds longer.
  • Add the water and salt to the pan and bring to a boil.  Reduce the heat to low and cover.  Simmer for 25 minutes or until tender and the liquid has been absorbed.
  • Remove the pan from heat and fluff the rice with a fork.  Place the dried fruit on top and cover.  Steam for 10 minutes.
  • Gently stir the rice and dried fruit and place in a serving bowl. Top with the nuts and chopped cilantro. Serve and enjoy!
