Mexican Power Blend Salad

A refreshing, vegetarian burrito bowl filled with veggies, rice and beans then topped with a tangy lime dressing.

Ingredients

  • 1 cup cilantro leaves packed
  • 3 tbsp lime juice
  • 1 clove garlic minced
  • 2 tsp maple syrup
  • ½ tsp ground cumin
  • ½ cup olive oil
  • ½ tsp kosher salt
  • tsp pepper
  • 3 cups cooked Power Blend
  • 1 cup corn
  • 1 pint cherry tomatoes halved
  • 1 cup black beans rinsed and drained
  • 3 green onions sliced thinly on the bias
  • 1 avocado diced
  • 1 jalapeño seeded and chopped

Instructions

  • Place the cilantro, lime juice, garlic, maple syrup, cumin, olive oil, salt and pepper in the bowl of a food processor.  Process until smooth, then taste and adjust the seasoning as necessary.
  • Place the rice, corn, cherry tomatoes, beans, green onions, avocado and jalapeño into a large bowl.  Add enough dressing to coat, stirring gently to combine.  Enjoy!
