Ingredients
- 1 cup cilantro leaves packed
- 3 tbsp lime juice
- 1 clove garlic minced
- 2 tsp maple syrup
- ½ tsp ground cumin
- ½ cup olive oil
- ½ tsp kosher salt
- ⅛ tsp pepper
- 3 cups cooked Power Blend
- 1 cup corn
- 1 pint cherry tomatoes halved
- 1 cup black beans rinsed and drained
- 3 green onions sliced thinly on the bias
- 1 avocado diced
- 1 jalapeño seeded and chopped
Instructions
- Place the cilantro, lime juice, garlic, maple syrup, cumin, olive oil, salt and pepper in the bowl of a food processor. Process until smooth, then taste and adjust the seasoning as necessary.
- Place the rice, corn, cherry tomatoes, beans, green onions, avocado and jalapeño into a large bowl. Add enough dressing to coat, stirring gently to combine. Enjoy!
