Ingredients
- 2 tbsp oil
- ½ onion chopped fine
- 1 cup Planet Rice Sprouted Brown Rice
- 1 clove garlic minced
- ½ tsp ground cumin
- ½ tsp turmeric
- ½ tsp cinnamon
- 1⅛ cup water or stock
- ¾ tsp kosher salt
- ⅓ cup dried fruit such as apricots, dates, figs or raisins (chopped if large)
- ⅓ cup toasted nuts such as almonds or pine nuts
- 2 tbsp freshly chopped cilantro
Instructions
- Heat the oil in a medium saucepan over medium heat. Add the onion and cook until softened, about 3 minutes. Add the rice and cook until golden, stirring often, about 3 minutes more. Stir in the garlic, cumin, turmeric and cinnamon and cook 30 seconds longer.
- Add the water and salt to the pan and bring to a boil. Reduce the heat to low and cover. Simmer for 25 minutes or until tender and the liquid has been absorbed.
- Remove the pan from heat and fluff the rice with a fork. Place the dried fruit on top and cover. Steam for 10 minutes.
- Gently stir the rice and dried fruit and place in a serving bowl. Top with the nuts and chopped cilantro. Serve and enjoy!
