Ingredients
- 4 tbsp avocado oil
- ½ onion chopped fine
- 1 cup California Calrose rice
- 1 clove garlic minced
- 1 tsp ground cumin
- 1¼ cups water
- 4 tbsp tomato paste
- ¾ tsp salt
Instructions
- Heat the oil in a mediumsaucepan over medium heat. Add the onionand cook 3 minutes until softened. Addthe rice and stir until coated with the oil. Continue to cook until golden brown, about 2-3 minutes. Stir in the garlic and cumin and cook 30seconds longer.
- Add the water, tomatopaste and salt and stir well to combine. Bring to a boil then reduce the heat. Cover and simmer for 25-30 minutes until the liquid has been absorbed
- Remove the rice from heat,fluff with a fork and cover once more. Let stand for 10 minutes. Serveand enjoy!
