Spanish Rice

A minimal and nutritious Spanish Rice recipe that calls for avocado oil and our much-beloved Calrose rice.

Servings: 2 people

Ingredients

  • 4 tbsp avocado oil
  • ½ onion chopped fine
  • 1 cup California Calrose rice
  • 1 clove garlic minced
  • 1 tsp ground cumin
  • cups water
  • 4 tbsp tomato paste
  • ¾ tsp salt

Instructions

  • Heat the oil in a mediumsaucepan over medium heat.  Add the onionand cook 3 minutes until softened.  Addthe rice and stir until coated with the oil. Continue to cook until golden brown, about 2-3 minutes.  Stir in the garlic and cumin and cook 30seconds longer.
  • Add the water, tomatopaste and salt and stir well to combine. Bring to a boil then reduce the heat. Cover and simmer for 25-30 minutes until the liquid has been absorbed
  • Remove the rice from heat,fluff with a fork and cover once more. Let stand for 10 minutes.  Serveand enjoy!
